- Mexican Chorizo – Chorizo is typically sold uncooked in chubs or links. While pork chorizo is the most popular, there are many varieties, such as beef and soy chorizo. (Here’s something funny: In Spanish, “Soy chorizo” translates to “I am chorizo”, so many people think the package is chorizo introducing itself!)
- Eggs – I use 2 large eggs per person, but you can use more or less, or different sizes, based on your family’s preference.
- Vegetable Oil – While chorizo can be oily on its own, I recommend using a drizzle of oil to avoid the egg sticking to the pan when scrambling.

How to Make Huevos con Chorizo
