What are Entomatadas?
Entomatadas are a traditional Mexican dish that is similar to enchiladas, except they are smothered in a tomato sauce. The dish is made with corn tortillas that are filled with a flavorful tomato sauce and queso fresco, then topped with the remaining sauce and cheese.
Growing up along the south Texas border, my mom used to make entomatadas for my siblings and I pretty frequently. As we grew older and less picky, she added diced onion or opted to make enchiladas rojas, which were a bit spicer. To make them more filling, she’d also add shredded chicken along with the queso fresco inside the tortillas. How to Make Entomatadas

Simmer sauce
Add tomato sauce, salt, garlic, and cumin to a frying pan on medium heat. Simmer for 5 minutes. -
Prepare filling
While the tomato sauce simmers, dice half an onion and combine with crumbled queso fresco. -
Fry tortillas
In a larger pan, heat oil on medium heat. Fry tortillas for 1 minute, flipping halfway. -
Assemble entomatadas
Use a spoon to spread the tomato sauce inside of each tortilla. Fill tortillas with queso fresco. Roll up the tortillas. Repeat.Consider adding shredded chicken to make this recipe more filling! -
Top tortillas
Top the rolled up tortillas with remaining tomato sauce and crumbled queso fresco. -
