  • Chicken - A staple! While you can use any chicken for this recipe, I prefer using chicken thighs cooked in the air fryer. You can choose to boil or roast your chicken, or if you're really in a rush, buy a rotisserie chicken or pre-shredded chicken available at most major grocery stores!

Pollo Verde Ingredients
  • 16 oz chicken
  • 2 zucchini
  • 15.7 oz Herdez Roasted Salsa Verde
  • 1 jalapeño
  • 1/2 onion
  • 2 tbsp chicken bouillon
Pollo en Salsa Verde Recipe
  1. Cook chickenSeason chicken with a tablespoon of bouillon, and cook using your preferred method until the internal temperature reaches 165 degrees. Allow to cool and shred.
  2. Prepare salsaIn a pan, roast a jalapeño and 1/2 an onion until slightly charred. In a blender, add jalapeño, onion, a tablespoon of chicken bouillon, and the jar of Herdez salsa. Blend.
  3. Slice zucchini

    Slice zucchini into 1/4 inch slices.

  4. Combine ingredients

    Heat a pan with 1 tablespoon of oil. Add salsa and zucchini, and let it cook for 5 minutes, before mixing in shredded chicken. Let ingredients simmer for an additional 3 minutes. Remove from heat.

  5. Serve

    Serve your pollo en salsa verde with a side of rice or your preferred side dish, and enjoy!
