Sandwichon is a sandwich cake that's recently gotten a lot of attention after going viral on tiktok. By attention, I mean most people are bashing on the idea of it and how gross it sounds. And honestly, I get it. A sandwich cake frosted with cream cheese sounds like a fever dream. But I promise you, once you taste it, you'll understand why it was a party staple in South Texas. Sandwichon was one of those dishes that only appeared on special occasions, like baby showers and birthday parties, never at home. It'd show up on your plate with a large serving of ensalada de coditos or potato chips as a side dish.
As such, finding a recipe proved to be a challenge, but I was able to take inspiration from a few that I found and experimented to make a version very similar to what I grew up eating in the Rio Grande Valley. With our traditonal sandwichon recipe, you won't have to wait until the next big party; you can make a small batch at home for you and your loved ones. Learn how to make sandwichon, a sandwich cake filled with ham, cheese, and chicken salad that is popular in south Texas.
Chop 5 slices of cooked ham and mix with 3 teaspoons of sour cream.
Follow our Mexican chicken salad recipe for this step.
Mix 4 ounces of softened cream cheese and 3 tablespoons of sour cream until smooth.
Cut off the crusts of your bread with a knife. If using uncrusted bread, skip this step.
Spread out 3 pieces of bread in a row on a sheet pan or cutting board.
Spread your ham and sour cream filling evenly across the base layer. Add another layer of bread above the ham filling.
Spread the cheese dip evenly across the second layer of bread. Add another layer of bread above the cheese spread.
Spread your chicken salad across the previous layer of bread. Add a final layer of bread.
Spread icing evenly over the top and sides of your sandwichon. Refrigerate for at least 15 minutes so icing can set.
While the icing is setting, drain your pineapple slices and cherries. Once the icing has set, decorate your sandwichon with pineapple, cherries, and chopped pecans.
