Cook chicken
Season chicken with a tablespoon of bouillon, and cook using your preferred method until the internal temperature reaches 165 degrees. Allow to cool and shred. -
Prepare salsa
In a pan, roast a jalapeño and 1/2 an onion until slightly charred. In a blender, add jalapeño, onion, a tablespoon of chicken bouillon, and the jar of Herdez salsa. Blend. -
Slice zucchini
Slice zucchini into 1/4 inch slices.

Combine ingredients
Heat a pan with 1 tablespoon of oil. Add salsa and zucchini, and let it cook for 5 minutes, before mixing in shredded chicken. Let ingredients simmer for an additional 3 minutes. Remove from heat.
